A family winery founded in 1998 with the aim of producing premium wines from a variety of exceptional grapes, the Tinta de Toro.
Roberto San Ildefonso and his brother Javier came to Toro after visiting different wine regions passionate about the grape potential that they found here. In recent years his daughter Paloma has also been incorporated, so that the San Ildefonso family works with conviction to offer elegant wines with their own personality.
In Sobreño Wineries they take care of the elaboration with care and care from the beginning, from the field.
The conception of a modern winery and adapted to the latest technologies, maintaining the tradition in the cultivation of grapes and developing a sustainable agriculture are part of our philosophy.
The winery is located on a 24-hectare estate planted with vineyard.
Vineyard
Finca Sobreño has 80 hectares of vineyards, of which more than half are over 35 years old, and a quarter are certified organic in the DO Toro.
In addition, another 90 hectares owned by vine growers in the area are controlled.
Many strains are prefiloxéricos, that is to say, they are planted on the franc foot, planted directly without need of rootstock, what allows an extraordinary longevity to the strains.
The Sobreño vineyards are spread over different denomination payments, but never too far away for a grape to suffer on the way to the winery.
After taking care of the entire vegetative cycle of the vine to obtain the best grapes, they select them looking for the characteristics they want to highlight in each of the Finca Sobreño wines.
Production
The elaboration takes place in a room with stainless steel tanks with automatic temperature control. One of the particularities of these deposits is their height and diameter, being lower and wider than normal to achieve wines with greater color and aromatically more intense.
Subsequently the aging takes place in Bordeaux barrels of 225 liters, 90% American oak and 10% French oak. These barrels are stored in a room specially conditioned both thermally and acoustically, prepared to resist and maintain both the temperature and constant humidity.
At the end of aging the wine rests for a while in the bottle, finishing rounded before being put on the market.
